Funfetti cake with vanilla layers filled with colorful sprinkles and topped with vanilla buttercream. Ideal for birthdays.
Ingredients:
  • 4 large eggs
  • Baking spray with flour
  • 1 cup unsalted butter, softened
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 0.75 cup multicolored sprinkles (jimmies)
  • 6.5 cups powdered sugar
  • 0.5 teaspoon kosher salt
  • 0.5 cup sour cream
  • 0.25 cup multicolored sprinkles (jimmies)
  • additional multicolored sprinkles (jimmies) for garnish
Instructions:
  • To start making the cake, preheat the oven to 350 degrees F (175 degrees C. Then, coat 3 (8-inch) round cake pans with baking spray that contains flour and line the bottom of each pan with parchment paper cut to fit.
  • In a stand mixer with a paddle attachment, beat butter and white sugar until light and fluffy for about 4 minutes. Add eggs one at a time on low speed until combined.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the flour mixture to the butter mixture in 3 parts, alternating with milk and starting and ending with the flour mixture. Mix on low speed until combined after each addition. Then, mix in vanilla extract and sprinkles on low speed for about 20 seconds.
  • Divide the luscious batter equally into the awaiting pans, generously filling each with about 2 cups.
  • Bake in the preheated oven for 25 to 28 minutes or until a wooden pick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then invert them onto a wire rack to cool completely, about 30 minutes.
  • For the frosting, in the bowl of a stand mixer fitted with a paddle attachment, beat butter at medium speed until creamy for about 2 minutes. Add powdered sugar, salt, and vanilla. Mix on low speed until combined for about 30 seconds. Increase speed to high and beat in sour cream until fluffy, scraping down sides as needed, for 1 1/2 to 2 minutes. Finally, stir in the sprinkles.
  • Place a cake layer on a plate and generously spread with 3/4 cup frosting. Repeat with another layer of cake and frosting. Add the final cake layer and coat the top and sides of the cake with the remaining frosting. Sprinkle on more sprinkles for extra flair. Chill the cake in the refrigerator with a loose covering.
