Funfetti cake with white chocolate frosting

Whip up a festive Easter funfetti cake with white chocolate frosting and marshmallow toppings to delight the kids.
Ingredients:
  • 300g Butter, softened
  • 220g caster sugar
  • 1 tsp vanilla bean paste
  • 2 Free Range Eggs
  • 4 Free Range Egg whites
  • 450g self-raising flour
  • 125ml milk
  • 250.00 ml Rainbow Sprinkles
  • 100g marshmallows, quartered
  • Coles Rainbow Sprinkles, extra, to decorate
  • 200g butter, softened
  • 400g icing sugar mixture
  • 20.60 gm milk
  • 100g white chocolate, melted, cooled
Instructions:
  • Preheat your oven to 170C. Prepare two 20cm round cake pans by greasing and lining the base and sides with baking paper, leaving a 5cm overhang.
  • In a large bowl, whip butter, sugar, and vanilla with an electric mixer until light and fluffy.
  • Slowly incorporate the eggs and egg whites one at a time, ensuring each one is well beaten before adding the next. Beat for an additional minute to achieve a smooth consistency.
  • Alternate adding the flour and milk to the butter mixture, stirring until well combined.
  • Fold in colorful sprinkles until evenly distributed throughout the batter. Divide the batter evenly between the prepared pans. Bake for 40-45 mins, or until a toothpick inserted into the center of the cakes comes out clean.
  • Cool the pans for 10 minutes, then transfer the contents onto a wire rack to cool completely.
  • For the white chocolate frosting, cream butter in a bowl with an electric mixer until pale and creamy. Gradually beat in icing sugar, then add milk and combine. Finally, mix in the white chocolate until smooth.
  • Begin by spreading a layer of white chocolate frosting on a cake platter and placing one cake on top. Using a palette knife, spread 1 cup of frosting over the cake evenly. Place the remaining cake on top and cover the entire cake with the remaining frosting.
  • Garnish the cake with marshmallows and an additional sprinkle of sprinkles.
