Party-perfect chocolate cupcakes that appeal to all ages.
Ingredients:
  • 125g butter, softened
  • 161.25 gm caster sugar
  • 2 eggs, lightly beaten
  • 4.40 gm vanilla extract
  • 187.50 gm self-raising flour
  • 42.90 gm Cocoa
  • 169.95 gm milk
  • Chocolate icing, to decorate
  • Icing flowers, to decorate
  • Cachous, to decorate
Instructions:
  • Combine the butter and sugar until light and fluffy. Mix in the eggs and vanilla thoroughly. Gently fold in the sifted flour and cocoa, alternating with the milk, until fully combined.
  • Fill the 1/3 cup capacity patty paper lined muffin pans with the mixture. Bake at 180°C for 20 minutes or until cooked through. Let them cool on a wire rack for 10 minutes, then remove from the pan to cool completely.
  • Frost the cakes with chocolate icing, top with cachous or icing flowers, and let the icing firm up before serving.
