Homemade Garam Masala: A fragrant and essential South Asian spice blend.
Ingredients:
  • 2 tablespoons plus 1 teaspoon (15g) coriander seeds
  • 4 teaspoons (10g) cumin seeds
  • 2 teaspoons (6g) green cardamom pods
  • 3/4 teaspoon whole cloves (1g)
  • 1 teaspoon black peppercorns (3g)
  • 1/2 stick (2.9g) Ceylon cinnamon
  • 1/2 (0.3g) Tej patta (Indian bay leaf), crushed into 1/2-inch pieces (optional)
Instructions:
  • Toast the spices in a skillet over medium-low heat until aromatic and lightly toasted, stirring frequently, for about 2 to 3 minutes. Transfer to a plate to cool completely. If using an electric burner, warm the skillet first; if using a gas burner, add spices directly to the skillet.
  • Grind the spices in a spice grinder, coffee grinder, or food processor until they form a fine powder after cooling.
  • Store the freshly ground spices in a labeled airtight jar, making sure to seal it completely. Keep in a cool, dark place, and use within the first few weeks for the freshest taste.
