Save money by making your own spice mix in 20 minutes to elevate your dishes with exotic flavors.
Ingredients:
  • 5 black cardamom pods
  • 2 tablespoons coriander seeds
  • 2 teaspoons cumin seeds
  • 1 teaspoon whole cloves
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon freshly grated nutmeg
  • 6 cinnamon sticks, broken into pieces
  • 6 bay leaves
Instructions:
  • In a 10-inch nonstick skillet over medium heat, toast the cardamom pods for 5 minutes, stirring frequently. Remove from heat and let cool slightly. Crack open each pod with your thumb and forefinger, discard the husks, and keep the seeds.
  • Combine all ingredients in skillet and cook over medium heat for 2 to 3 minutes, stirring often, until cumin seeds are browned and mixture is highly fragrant. Transfer to a glass dish and let cool.
  • Place the spice mixture and reserved cardamom seeds in a spice grinder or clean coffee grinder. Grind for 30 to 40 seconds until finely ground. Store in a tightly sealed jar, away from heat and light, for up to 3 months.
