Versatile side dish or meatless main made with colorful veggies and grains, perfect with turkey or roast beef.
Ingredients:
  • 1 cup uncooked quinoa
  • 2 cups water
  • 1/2 teaspoon salt
  • 2 teaspoons finely shredded lemon peel
  • 1 tablespoon fresh lemon juice
  • 1 bag (12 oz) frozen garden vegetable medley
  • 2 tablespoons butter or olive oil
  • 1 medium yellow bell pepper, cut into 1/2-inch squares
  • 1/2 cup thin strips red onion
Instructions:
  • Prepare the quinoa according to package instructions using water and salt. Once cooked, stir in the refreshing flavors of lemon peel and lemon juice. Cover to retain warmth.
  • Prepare the garden vegetable medley according to the instructions on the bag.
  • In a 10-inch skillet over medium heat, melt butter. Add bell pepper and onion, and cook for 3 to 5 minutes, stirring often, until vegetables are just tender. Mix in the cooked garden vegetable medley. Serve by spooning the quinoa mixture onto a platter and topping it with the vegetable medley.
