Vibrant garden veggies and aromatic spices enhance frozen cauliflower rice for a delicious vegan meal everyone will enjoy.
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 0.5 cup chopped onion
  • 0.5 cup julienned carrots
  • 0.5 cup French-cut green beans
  • 0.5 cup diced fresh mushrooms
  • 0.25 cup thinly sliced red bell pepper
  • 1 pound frozen riced cauliflower
  • 1 tablespoon minced fresh garlic
  • 1 teaspoon ground turmeric
  • 0.25 teaspoon sweet paprika
  • 0.125 teaspoon curry powder, or to taste
  • salt and ground black pepper to taste
  • 2 tablespoons blanched slivered almonds
  • 1 pinch chopped fresh parsley, or to taste
Instructions:
  • In a large nonstick skillet, heat oil over medium heat. Saute onion for 1 minute. Add carrots, green beans, mushrooms, and bell pepper. Stir and cook for 3-4 minutes.
  • Add riced cauliflower, garlic, turmeric, paprika, curry powder, salt, and pepper to the skillet. Cook and stir over medium heat until vegetables are cooked to your liking, around 5 minutes.
  • Garnish the warm dish with almonds and parsley before serving.
