Prepare vegetarian cauliflower parmigiana with golden crumbed cauliflower steaks.
Ingredients:
  • 1 egg
  • 41.20 gm milk
  • 187.50 ml panko breadcrumbs
  • 1 large cauliflower, cut into 4 steaks
  • 18.20 gm extra virgin olive oil
  • 4 fresh tomatoes, finely chopped
  • 2 garlic cloves, crushed
  • 165.00 ml grated mozzarella
  • Oven-baked chips, to serve
  • Salad, to serve
  • Fresh basil leaves, to serve
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and prepare a large baking tray by lining it with baking paper.
  • Combine the egg and milk in a shallow bowl, whisk until blended, season with your favorite spices. Place breadcrumbs in another shallow bowl.
  • Dip each cauliflower steak in the egg mixture, then coat with breadcrumbs. Arrange on tray. Repeat for all steaks. Bake for 15 minutes.
  • Heat oil in a medium frying pan over medium heat. Add tomatoes and garlic. Cook, stirring occasionally, for 15 minutes until thickened. Season with salt and pepper to taste.
  • Place the cauliflower steaks on a baking sheet and generously spoon tomato sauce over them. Sprinkle with cheese and bake until the cheese is golden and the cauliflower is tender, about 10 minutes.
  • Garnish cauliflower steaks with basil leaves and serve with chips and salad.
