Crispy golden brown cauliflower patties fried in olive oil for a simple and elegant side dish.
Ingredients:
  • 1 head cauliflower, broken into florets
  • 1 cup almond flour
  • 2 eggs
  • 0.5 teaspoon cayenne pepper
  • 2 tablespoons extra-virgin olive oil, or as needed
Instructions:
  • - In a saucepan, bring water to a boil. - Add cauliflower and boil until tender, approximately 15 minutes. - Strain the cauliflower, transfer to a bowl, and mash with a fork.
  • Mix almond flour, eggs, cayenne pepper, salt, and black pepper with cauliflower until thoroughly combined. Shape into 1/4-cup patties.
  • In a skillet over medium heat, golden brown patties in a single layer by frying them in 1 teaspoon of olive oil for about 5 minutes on each side. Repeat with the remaining patties using more olive oil.
