Delicious vegetarian patties, perfect for snacking or appetizers. Enjoy with ketchup or mint chutney. Customize with cauliflower or corn.
Ingredients:
  • 2 large potatoes, peeled and diced
  • 1 carrot, peeled and diced
  • 0.5 cup fresh green beans, trimmed and snapped
  • 0.25 cup frozen green peas
  • 1 egg
  • 1.5 cups bread crumbs
  • 0.5 teaspoon garam masala
  • salt to taste
  • 0.25 cup vegetable oil for frying
Instructions:
  • Combine the potatoes, carrot, green beans, and peas in a pot, covering them with water. Boil until the potatoes are tender. Drain and transfer to a bowl, then mash with a potato masher, keeping some chunks.
  • Combine the egg, 3/4 cup bread crumbs, garam masala, cayenne pepper, and salt with the mashed vegetables, shaping the mixture into small 1/2 inch thick patties. Coat the patties with the remaining bread crumbs.
  • In a large skillet over medium heat, heat the oil until shimmering, then fry the coated patties until they turn a beautiful golden brown. Place them on paper towels to drain excess oil.
