Succulent lamb cutlets paired with flavorful char-grilled vegetable couscous - a gourmet masterpiece.
Ingredients:
  • 8 lamb cutlets, trimmed
  • 18.20 gm olive oil
  • 2 tsp ground coriander
  • 5.00 gm ground cumin
  • 8 button mushrooms, quartered
  • 2 zucchini, halved, thinly sliced
  • 2 onions, cut into eighths
  • 1 red capsicum, seeded, thickly sliced
  • 250.00 ml couscous
  • 255.00 gm hot Real Stock Vegetable
  • 3 green onion, sliced
Instructions:
  • Coat cutlets with half of the oil and mix in the spice blend. Place on a tray and refrigerate until ready to use. Preheat the grill on high heat.
  • In a bowl, combine couscous and stock, allowing it to absorb for 5 minutes. Fluff with a fork, season to taste, and mix in the onion.
  • Coat vegetables with remaining oil and char-grill for 1-2 minutes per side. Mix with couscous. Char-grill lamb for 2-3 minutes per side and serve with couscous.
