Savor Middle Eastern-inspired lamb cutlets with char-grilled vegetable couscous for a cozy meal.
Ingredients:
  • 8 lamb cutlets, trimmed
  • 18.20 gm olive oil
  • 2 tsp ground coriander
  • 5.00 gm ground cumin
  • 8 button mushrooms, quartered
  • 2 zucchini, halved, thinly sliced
  • 2 onions, cut into eighths
  • 1 red capsicum, seeded, thickly sliced
  • 250.00 ml couscous
  • 255.00 gm hot vegetable stock or water
  • 3 green onion, sliced
Instructions:
  • Brush the cutlets with half of the oil and coat them with the mixed spices. Place them on a tray and refrigerate until ready to use. Preheat the char-grill on high.
  • In a bowl, add couscous and cover with stock. Allow to sit for 5 minutes until the stock is absorbed. Fluff the couscous with a fork, season to taste, and mix in the onions.
  • Brush the vegetables with the remaining oil and char-grill them for 1-2 minutes on each side. Toss them through the couscous. Char-grill the lamb for 2-3 minutes on each side and serve with the couscous.
