Whip up succulent lamb cutlets and crisp salad in just 20 minutes for a quick and delicious dinner.
Ingredients:
  • 18.20 gm olive oil
  • 21.00 gm lemon juice
  • 2 tsp fennel seeds
  • 1 red chilli, chopped
  • 1 garlic clove, crushed
  • 5.00 gm ground paprika
  • 1.20 gm sea salt flakes
  • 12 Lamb Cutlets
  • 36.40 gm olive oil, extra
  • 350g pkt Superfood Vegetable Mix
  • 2 garlic cloves, extra, crushed
  • Thinly sliced red chilli, to serve
  • Lemon wedges, to serve
Instructions:
  • In a blender or food processor, blend oil, lemon juice, vinegar, fennel seeds, chopped chili, garlic, paprika, and salt until nearly smooth. Pour the mixture into a shallow ceramic dish, add the lamb, and coat evenly.
  • Preheat a barbecue grill or chargrill on high heat. Grill the lamb for 3-4 minutes on each side for a perfect medium cook or until it reaches your desired doneness. Place the lamb on a plate and tent it with foil. Let it rest for 5 minutes before serving.
  • Heat a generous amount of oil in a large wok over high heat. Quickly stir-fry the vegetable mix and additional garlic for 2 minutes or until vegetables are just tender. Season to taste.
  • Garnish the lamb and vegetables with sliced chili and lemon wedges before serving.
