Fennel and chilli spiced lamb forequarter chops with superfood vegetable mix

Whip up a quick and delicious lamb dinner in no time.
Ingredients:
  • 21.00 gm lemon juice
  • 20.00 ml red wine vinegar
  • 2 tsp fennel seeds
  • 1 red chilli, chopped
  • 5.00 gm ground paprika
  • 4 Lamb Forequarter Chops
  • 36.40 gm olive oil, extra
  • 350g pkt Superfood Vegetable Mix
  • 2 garlic cloves, extra, crushed
  • Thinly sliced red chilli, to serve
  • Lemon wedges, to serve
Instructions:
  • In a blender or food processor, blend the oil, lemon juice, vinegar, fennel seeds, chopped chili, garlic, paprika, and salt until nearly smooth. Pour the mixture into a shallow ceramic dish and coat the lamb by turning it in the sauce.
  • Preheat a sizzling barbecue grill on high heat. Grill the lamb for 3-4 minutes on each side for a perfect medium cook or to your preferred doneness. Place the lamb on a plate, cover it with foil, and let it rest for 5 minutes.
  • Heat more oil in a wok or large frying pan on high heat. Stir-fry vegetable mix and additional garlic for about 2 minutes until vegetables are just wilted. Season to taste.
  • Garnish the lamb and vegetables with sliced chili and lemon wedges before serving.
