Air fryer black garlic cauliflower patties topped with melted Swiss cheese for a quick and tasty veggie side dish.
Ingredients:
  • 1 medium head cauliflower, cut into florets
  • 4 solo black garlic bulbs
  • 2 eggs, beaten
  • 0.25 cup Italian-seasoned bread crumbs
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper to taste
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried parsley
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon onion powder
  • 4 slices Swiss cheese, torn into 4 pieces each
Instructions:
  • In a food processor, pulse cauliflower and black garlic until finely "riced". Transfer to a bowl and add flour, eggs, bread crumbs, baking powder, salt, black pepper, basil, parsley, oregano, rosemary, red pepper flakes, and onion powder. Mix until well combined.
  • Preheat the air fryer to 400°F (200°C) and line the basket with parchment paper, then spray with cooking spray for easy cleanup.
  • Use a large cookie scoop to place cauliflower mixture onto parchment paper; gently flatten with your fingers.
  • Air fry the patties for 4 to 6 minutes until cooked, then flip with a spatula and cook for an additional minute until set. Top each patty with a 1/4 slice of Swiss cheese, return to the air fryer, and cook for 30 to 40 seconds until cheese is melted.
