Golden turmeric-roasted whole cauliflower draped in aromatic curry sauce.
Ingredients:
  • 1 large head cauliflower
  • 4 tablespoons vegetable oil
  • 0.5 teaspoon ground turmeric
  • 1 small onion, minced
  • 2 tomatoes, pureed
  • 1 teaspoon garlic powder
  • 3 teaspoons garam masala
  • salt to taste
  • 0.5 head lettuce
Instructions:
  • Preheat the oven to 350°F (175°C). Remove most of the cauliflower's stem and place the entire head in a baking dish.
  • Combine two tablespoons of oil with turmeric in a small frying pan. Use the mixture to brush the cauliflower head.
  • Roast the cauliflower for 30 minutes.
  • Cook the minced onions in two tablespoons of oil until they turn a medium brown color. Stir in the pureed tomatoes, garlic powder, garam masala, and salt. Simmer the mixture for 10 minutes while the cauliflower is cooking.
  • On a serving plate, layer lettuce leaves, top with cauliflower, and drizzle with tomato curry. Serve while hot.
