Garlic and chorizo prawns

Spanish-style prawn and spicy sausage tapas.
Ingredients:
  • 2 large chorizo sausages, thinly sliced
  • 125ml (1/2 cup) olive oil
  • 6 garlic cloves, crushed
  • 2kg medium green tiger prawns, peeled leaving tails intact
  • 125.00 ml chopped fresh coriander
  • 20.00 ml dry sherry
  • Lemon wedges, to serve
  • Crusty bread, to serve
Instructions:
  • Preheat a large non-stick pan over high heat. Cook the chorizo, stirring occasionally, for 4-5 minutes until golden and crisp. Transfer the chorizo to a paper towel-lined plate using a slotted spoon.
  • Lower the heat, then add oil and garlic to the pan. Cook and stir for 1 minute until fragrant. Add prawns and cook for 4-5 minutes until they curl and change color. Finally, mix in chorizo, coriander, and sherry.
  • Plate the prawn mixture into individual bowls and accompany with lemon wedges and crusty bread.
