Juicy pork belly with crispy crackling, covered in savory garlic butter - a must-try roast!
Ingredients:
  • 1.5kg Pork Belly Roast Boneless
  • 3 garlic cloves, thinly sliced
  • 4.80 gm sea salt flakes
  • 3 brown onions, cut into wedges
  • 80g butter
  • 3 sprigs fresh thyme
  • 382.50 gm salt-reduced chicken stock
Instructions:
  • Preheat your oven to a high temperature to ensure a perfectly crispy pork roast. Score the pork skin with a small knife and stuff it with aromatic garlic slices. Flip the pork over, pat the skin dry, brush it with oil, and generously season it with salt for utmost flavor and a crispy finish.
  • Layer the baking dish with onions and then place the pork, rind-side up, on top. Roast for 20-30 minutes until the rind starts to crackle.
  • In a small frying pan over low heat, gently melt butter until sizzling. Stir in crushed garlic and thyme, heating for 30 seconds. Take off the heat.
  • Lower the oven temperature to 180C/160C fan-forced. Pour the stock and two-thirds of the garlic butter around the pork in the dish. Roast for 2 1/2 hours, basting the pork with the remaining butter during the last 30 minutes of cooking until the pork is very tender. Serve.
