Garlic choy sum and snow peas with peanuts

Experience the fiery flavors of Sichuan cuisine with this must-try dish for your next homemade feast.
Ingredients:
  • 55g (1/3 cup) raw peanuts
  • 1 bunch choy sum, trimmed, halved crossways
  • 3 garlic cloves, crushed
  • 2 tsp finely grated fresh ginger
  • 1 small fresh red chilli, finely chopped
  • 350g snow peas, trimmed
  • 20.00 ml sesame oil
  • 80ml (1/3 cup) chicken style liquid stock (see note)
  • 60ml (1/4 cup) oyster sauce (see note)
Instructions:
  • In a hot wok, sizzle the peanuts in peanut oil until golden, then drain on paper towel-lined plate.
  • 1. Separate the choy sum stems from the leaves. 2. Combine the garlic, ginger, and chili in a wok. Stir-fry until fragrant. 3. Add the choy sum stems and snow peas. Stir-fry for 2 minutes. 4. Mix in the choy sum leaves, sesame oil, stock, and oyster sauce. Stir-fry until vegetables are tender-crisp and the sauce slightly thickens.
