Delicious lamb cutlets with a variety of nutritious vegetables.
Ingredients:
  • 2-3 (about 200g) lamb cutlets, trimmed of excess fat
  • 9.20 gm olive oil
  • Salt & ground black pepper
  • 1 small brown onion, cut into 2cm chunks
  • 1 celery stick, thinly sliced
  • 1/2 400g can whole peeled tomatoes
  • 1 small zucchini, cut into 2cm-thick slices
  • 40.00 ml chopped fresh continental parsley
Instructions:
  • In a bowl, combine the lamb with 1 teaspoon of oil, half of the garlic, salt, and pepper. Mix well until the lamb is coated. Cover the bowl and refrigerate while preparing the vegetables.
  • In a medium saucepan, gently heat the remaining oil over low heat. Toss in the onion, celery, and remaining garlic. Cook uncovered, stirring frequently, for about 5 minutes until the celery and onion turn soft.
  • Combine flavorful undrained tomatoes with salt and pepper. Simmer, uncovered, while gently breaking up tomatoes with a wooden spoon for 15 minutes until thickened. Introduce zucchini and continue cooking uncovered for an additional 10 minutes. Taste and adjust seasonings to perfection.
  • Preheat a chargrill, grill, or heavy-based frying pan on high heat. Sear the lamb for 3-5 minutes per side, or until it reaches your desired level of doneness.
  • Mix the parsley into the vegetables and serve alongside the lamb cutlets.
