30-minute omega-3 mussels with fresh tomato toppings.
Ingredients:
  • 4 medium tomatoes, seeded, finely diced
  • 40.00 ml chopped fresh basil leaves, plus extra leaves to serve
  • 82.50 ml red wine vinegar
  • 150.15 gm extra virgin olive oil
  • 1 chorizo sausage, finely diced
  • 82.50 gm dry white wine
  • 2kg cleaned small black mussels (see note)
  • Chargrilled slices crusty Italian bread, to serve
Instructions:
  • Combine ripe tomatoes, fresh basil leaves, balsamic vinegar, and 1/2 cup of oil in a small bowl. Season generously with salt and pepper, then mix well.
  • In a large, heavy-based saucepan over medium heat, sauté onion and chorizo in oil until onion is soft, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Pour in wine and bring to a boil. Add mussels, cover, and cook for 5 minutes or until they open (discard any that remain closed).
  • Transfer the mixture into individual serving bowls. Drizzle with the tomato mixture and garnish with fresh basil. Serve alongside some delicious bread.
