Garlic Pork Kabobs

Succulent pork and veggie kabobs grilled to perfection, coated in a delicious blend of Swanson® Chicken Stock, garlic, ketchup, vinegar, and brown sugar marinade.
Ingredients:
  • 1.75 cups Swanson® Chicken Stock
  • 2 tablespoons cornstarch
  • 1 tablespoon packed brown sugar
  • 1 tablespoon ketchup
  • 2 teaspoons vinegar
  • 1 pound boneless pork loin, cut into 1-inch cubes
  • 12 medium mushrooms
  • 1 large red onion, cut into 12 wedges
  • 4 cherry tomatoes
  • 4 cups hot cooked regular long-grain white rice
Instructions:
  • Combine the stock, cornstarch, brown sugar, ketchup, and vinegar in a 1-quart saucepan, stirring until smooth. Cook over medium-high heat until it boils and thickens. Remove from heat.
  • Skewer the pork, mushrooms, and onion, alternating the ingredients on 4 skewers.
  • Prepare the grill by lightly oiling the rack and heating it to medium heat. Grill the kabobs for 20 minutes or until the pork is fully cooked, remember to turn and brush them frequently with the stock mixture. Thread 1 tomato onto the end of each skewer.
  • Bring the rest of the stock mixture to a boil over medium heat. Enjoy it with the kabobs and rice.
