Succulent pork chops marinated in a sweet, sticky, and subtly spicy sauce featuring brown sugar, garlic, fish sauce, and soy sauce by Chef John.
Ingredients:
  • 0.33333334326744 cup light brown sugar
  • 6 cloves garlic, crushed, or more to taste
  • 0.25 cup rice vinegar
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon ketchup
  • 0.5 teaspoon freshly ground black pepper
  • 2 teaspoons hot sauce, or to taste
  • 2 (10 ounce) thick-cut bone-in pork chops
  • 1 teaspoon vegetable oil
Instructions:
  • In a bowl, mix together brown sugar, garlic, rice vinegar, fish sauce, a splash of soy sauce, a plop of ketchup, black pepper, and hot sauce for the marinade.
  • Transfer half of the marinade to a baking dish, arrange the pork chops on top, then pour the rest of the marinade over them. Ensure the chops are well coated by tossing them. Cover with plastic wrap and marinate in the refrigerator for 1 to 2 hours, flipping them every 30 minutes.
  • Transfer the chops to a plate, making sure to collect any remaining marinade from the baking dish.
  • In a nonstick skillet over medium heat, heat oil. Add chops and cook until nicely charred with a springy texture when lightly touched, about 5 minutes per side. Transfer chops to a plate and let rest.
  • Transfer the flavorful marinade to the sizzling skillet. Increase the heat to medium-high and simmer until it thickens and becomes sticky, about 3 to 5 minutes. Add the pork chops back into the skillet along with any delicious juices.
  • Lower the heat to medium-low and continue cooking the pork chops, flipping and basting now and then, until they have a slightly pink center and the sauce reaches your desired stickiness level, for about 6 to 8 minutes. Check the pork's doneness by inserting an instant-read thermometer into the thickest part; it should read around 145 degrees F (63 degrees C).
  • Place each pork chop on a plate and generously drizzle with the sticky garlic sauce.
