10-minute garlic prawn noodle lettuce cups for a quick and easy last-minute dinner.
Ingredients:
  • 2 baby cos lettuces
  • 4 baby cucumbers (qukes)
  • 50g rice vermicelli noodles
  • 20g garlic butter
  • 24 peeled green prawns
  • 60ml (1/4 cup) sweet chilli sauce
  • 42.00 gm lime juice
  • 36.60 gm fish sauce
  • 1/2 bunch fresh coriander
  • 250.00 ml bought shredded carrot
Instructions:
  • Boil the kettle and preheat a large frying pan over medium-high heat.
  • Arrange the lettuce leaves neatly on a platter.
  • Place the noodles in a heatproof bowl and pour over boiling water to cover. Allow to sit for 3 minutes or until softened.
  • Pour the fragrant garlic-infused butter into the pan and melt until it forms a foamy sizzle. Add the prawns and sear for 2 minutes per side, or until they turn pink and curl enticingly.
  • Slice the cucumbers while whisking together sweet chili sauce, lime juice, and fish sauce in a jug. Add 2 tablespoons of chopped coriander to the dressing.
  • After draining the noodles, snip them into bite-sized pieces and arrange them in the lettuce cups. Add carrot, cucumber, and prawns on top. Finish by drizzling with dressing.
