Ingredients:
  • 1 x 375g pkt rice stick noodles (see note)
  • 36.80 gm vegetable oil
  • 1 red onion, halved, thinly sliced lengthways
  • 3 garlic cloves, finely chopped
  • 2 long fresh red chillies, thinly sliced
  • 220g (1 1/2 cups) coarsely chopped peanuts
  • 200g green prawns, peeled, deveined
  • 80ml (1/3 cup) chicken style liquid stock
  • 60ml (1/4 cup) fish sauce
  • 60ml (1/4 cup) soy sauce
  • 60ml (1/4 cup) fresh lime juice
  • 40.00 gm caster sugar
  • 125.00 ml fresh coriander leaves
  • 1 butter lettuce, leaves separated, washed, dried
Instructions:
  • In a heatproof bowl, soak the noodles in boiling water until tender, about 15 minutes. Drain before using.
  • Heat 1 tablespoon of oil in a large wok over high heat. Stir in onion, garlic, chili, and peanuts. Cook for 3 minutes until the onion starts to brown. Transfer to a plate.
  • Pour the rest of the oil into the wok. Cook the prawns in the wok by stirring constantly for 3 minutes, or until they are almost done.
  • Crack the egg into the wok and scramble for 1 minute. Stir in the noodles, peanut mixture, stock, fish sauce, soy sauce, lime juice, and sugar until well combined. Take off the heat and mix in most of the coriander.
  • Place the lettuce leaves on a serving plate and layer them with the noodle mixture. Finish by garnishing with the remaining coriander leaves before serving.
