Chilled soba noodles create a refreshing base for Marion Grasby's prawn noodle salad with sesame ginger dressing.
Ingredients:
  • 270g pkt dried soba noodles
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 16 medium cooked prawns, peeled, deveined, tails intact
  • 4 green shallots, thinly sliced
  • 20.00 ml finely chopped pink Japanese pickled ginger
  • 12.00 gm sesame seeds
  • 60ml (1⁄4 cup) sesame oil
  • 60ml (1⁄4 cup) soy sauce
  • 60ml (1⁄4 cup) rice wine vinegar
  • 28.60 gm honey
  • 1 tsp finely grated fresh ginger
Instructions:
  • Boil the soba noodles in a large saucepan according to package instructions until tender. Drain and place in a bowl of ice water to cool completely.
  • In a dry frying pan over medium-high heat, toast sesame seeds for 2 minutes until golden brown. Transfer seeds to a mortar and pound into a fine powder. Add sesame oil, soy sauce, vinegar, honey, and ginger to the ground sesame seeds in a small bowl. Whisk together with a fork until well combined.
  • Once prepared, drain the chilled soba noodles and place them in a spacious bowl. Combine with cucumber, prawn, shallot, pickled ginger, and sesame ginger dressing. Mix thoroughly and serve promptly.
