Wholesome avocado and prawn sushi - easy and delicious homemade treat.
Ingredients:
  • 2 nori sheets, halved lengthways
  • 600.00 gm prepared sushi rice (see related recipe)
  • 12.00 gm toasted black sesame seeds
  • 12.00 gm toasted white sesame seeds
  • 1/2 Lebanese cucumber, seeded, cut into batons
  • 1/2 just-ripe avocado, peeled, cut into thin strips
  • 6 large cooked prawns, peeled, deveined, halved lengthways
  • 65g mayonnaise
  • Japanese soy sauce, to serve
  • Wasabi, to serve
  • Pickled ginger, to serve
Instructions:
  • 1. Lay a sushi mat with the slats running horizontally in front of you on a clean surface. 2. Put a nori sheet on the mat with the shiny side facing down. 3. Use damp hands to spread a quarter of the rice evenly over the nori sheet. 4. Sprinkle black and white sesame seeds evenly over the rice. 5. Gently cover it with a large piece of plastic wrap.
  • Flip the rice and nori so the nori side is facing up. Place the bamboo mat under the plastic wrap. Layer the nori with cucumber, avocado, prawn, and a dollop of mayonnaise.
  • Using your index finger and thumb, lift the edge of the bamboo mat and plastic wrap. Place your finger over the filling to hold it in place. Roll the mat tightly away from you, wrapping the rice around the filling. Gently press the roll and keep rolling to finish. Shape and seal the roll by pressing lightly on the mat, then unwrap and remove. Repeat with the rest of the ingredients.
  • Slice each roll into 8 pieces using a sharp knife cleaned with a damp cloth. Arrange on a platter and serve with soy sauce, wasabi, and ginger.
