Celebrate Chinese New Year with a classic prawn noodle dish symbolizing long life.
Ingredients:
  • 90g (1/3 cup) smooth peanut butter
  • 60ml (1/4 cup) water
  • 42.00 gm soy sauce
  • 40.00 ml dry sherry
  • 30.00 ml apple cider vinegar
  • 20.00 gm caster sugar
  • 350g pkt chow mein noodles
  • 18.20 gm peanut oil
  • 1 tsp sesame oil
  • 18 cooked prawns, peeled leaving tails intact, deveined
  • 1 red capsicum, seeded, thinly sliced
  • 1 cucumber, halved lengthways, sliced diagonally
  • 160g pkt snow pea sprouts, trimmed
Instructions:
  • Combine the peanut butter, water, soy sauce, sherry, vinegar, and sugar in a bowl and whisk until smooth.
  • Boil noodles in a large saucepan for 3 minutes until tender, then drain and rinse under cold water. Return noodles to the pan, add oil, toss to coat, then mix in prawns, capsicum, cucumber, and most of the snow pea sprouts. Mix everything together.
  • Transfer the dish to a serving platter and garnish with the remaining sprouts. Drizzle with the peanut dressing before serving.
