Garlic-Parmesan Sweet Potatoes

Microwaved sweet potatoes coated in garlic-Parmesan blend, then pan-fried for a delicious side dish.
Ingredients:
  • 4 medium sweet potatoes
  • 0.75 cup olive oil, divided
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons garlic powder
  • 1 teaspoon salt, or to taste
Instructions:
  • Using a fork, prick the sweet potatoes all around. Arrange the sweet potatoes in a circular pattern in the microwave and cook until tender, for about 10 to 15 minutes.
  • Slice the potatoes into 1/2-inch slices and separate them. Brush with 1/4 cup of olive oil using a pastry brush, ensuring the flat surfaces are coated. Pour any excess oil over the potatoes.
  • Coat the sweet potatoes with oil in a large zip-top bag. Then, add Parmesan cheese, garlic powder, and salt. Seal the bag and shake well for 1 minute, making sure all pieces are coated evenly with the cheese and powder.
  • Heat 1/2 cup of olive oil in a skillet over medium-high heat until shimmering. Add sweet potatoes and cook for 7 minutes, tossing occasionally until golden and tender. Serve hot.
