Garlic and tamarind marinated pork loin grilled to juicy perfection.
Ingredients:
  • 0.125 cup lime juice
  • 0.125 cup soy sauce
  • 3 cloves garlic, minced
  • 1.5 tablespoons tamarind paste
  • 1 tablespoon sugar
  • 1 tablespoon sambal oelek
  • 1 pound pork loin
Instructions:
  • Combine lime juice, soy sauce, garlic, tamarind paste, sugar, and sambal oelek in a bowl. Whisk vigorously for 1 minute. Poke pork tenderloin all over with a fork or knife, then transfer it to a large resealable plastic bag. Pour in the marinade, seal the bag while pressing out any excess air. Refrigerate and marinate for 8 hours to overnight for optimal flavor.
  • Get your outdoor grill ready by preheating it to high heat and giving the grate a light coating of oil.
  • Take the pork loin out of the bag and sear it on the hot grill for 1 to 3 minutes on each side. Then, cook over indirect heat until fully cooked, for about 20 to 30 minutes, adjusting time according to thickness.
