Garlicky cauliflower and pesto swirl mash

Elevate your roast dinner with creamy garlic cauliflower pesto mashed potatoes.
Ingredients:
  • 2kg cauliflower
  • 1.5kg sebago potatoes, peeled, chopped
  • 3 garlic cloves, quartered
  • 250.00 ml fresh basil leaves
  • 40.00 ml pine nuts, toasted
  • 21.00 gm lemon juice
  • 250.00 ml grated parmesan
  • 56.88 gm extra virgin olive oil
  • 250g smooth ricotta
  • 50g butter, chopped
Instructions:
  • In a large saucepan, combine cauliflower, potato, and garlic. Cover with water and bring to a boil over high heat. Reduce to medium-low heat and simmer for 15 minutes or until vegetables are tender.
  • Combine basil, pine nuts, lemon juice, and 1/4 cup parmesan in a small food processor. Pulse until finely chopped. While the processor is running, slowly drizzle in the oil until blended. Season with salt and pepper to taste.
  • Drain the cauliflower mixture and return it to the pan over low heat. Mash it until well combined. Then, add the remaining parmesan, ricotta, and butter. Mash until smooth and combined. Finally, season with salt and pepper to taste.
  • Transfer the mashed mixture into a stylish serving bowl. Drizzle with flavorful pesto, creating a beautiful swirl. Present and enjoy.
