Delicious French butter cake with a rich, crumbly texture – a cross between shortbread and cake.
Ingredients:
  • 6 egg yolks
  • 1 tablespoon water
  • 1.5 cups all-purpose flour
  • 1 cup butter, softened
  • 0.75 cup white sugar
  • 2 tablespoons cornstarch
Instructions:
  • Preheat the oven to 375°F (190°C) and generously grease a 9-inch springform pan.
  • Combine 1 teaspoon of egg yolk with water in a small bowl, ready to use for glazing the cake.
  • In a large bowl, blend the remaining egg yolks, flour, butter, sugar, and cornstarch until a stiff and sticky dough forms, resembling cookie dough. Gently knead the dough to combine.
  • Use your hands to press the dough into the prepared pan, then brush the glaze on top for a beautiful finish.
  • Place in the preheated oven for 15 minutes, then lower the temperature to 350 degrees F (175 degrees C) and bake until golden brown, approximately 25 minutes longer. Allow to cool for 10 minutes before slicing the cake crosswise.
