Coconut ice gateau

Delicious frozen treat with meringue layers, white chocolate shards, and coconut balls.
Ingredients:
  • 3 egg whites, at room temperature
  • 155g (3/4 cup) caster sugar
  • 45g (1/2 cup) desiccated coconut
  • 150g white chocolate melts, melted
  • 300ml pouring cream, whipped
  • 150g pkt Ferrero Raffaello balls
  • 2 egg yolks
  • 50g sachet coconut milk powder
  • 300ml thickened cream, whipped
Instructions:
  • 1. Preheat the oven to 120C/100C fan forced. 2. Draw 3 rectangles on baking paper in the following sizes: 24 x 12cm, 25 x 13cm, and 26 x 15cm. 3. Place the baking paper marked side down on 3 baking trays. 4. Use electric beaters to whip egg whites in a bowl until soft peaks form. 5. Gradually add sugar, beating well until dissolved and mixture is thick and glossy. 6. Gently fold in the desiccated coconut.
  • Spread the fluffy meringue evenly over the three rectangles on trays. Bake for 1 hour or until beautifully crisp. Allow to cool completely in the oven with the door cracked open.
  • Combine the eggs and yolks with sugar in a heatproof bowl. Place the bowl over a saucepan of simmering water. Use hand-held electric beaters to beat for 5 minutes until thick, pale, and increased in volume. Add coconut milk powder and let it cool slightly. Fold in cream, then freeze the mixture for 1 hour until well chilled. Stir to combine the edges with the softer center.
  • Lay two 40cm pieces of plastic wrap in a criss-cross pattern in a 25 x 13cm loaf pan, leaving some overhang. Add meringue, then half the semifreddo, followed by more meringue and the rest of the semifreddo. Finish with the last meringue. Fold the plastic wrap over to cover the filling completely. Freeze for 8 hours or overnight until firm.
  • Lay a sheet of plastic wrap on the countertop and evenly spread a thin layer of melted white chocolate. Create ridges by folding the plastic wrap. Allow the chocolate to set. Gently stretch the plastic wrap lengthwise to create chocolate shards. Peel off the shards and store them in an airtight container.
  • Transfer gateau onto a serving platter, removing plastic wrap. Garnish with whipped cream, chocolate shards, and balls.
