Zesty summer pasta salad with lime-tomato dressing and a spicy jalapeno kick.
Ingredients:
  • 0.5 pound rotelle pasta
  • 4 green onions, chopped
  • 1 cup chopped green bell pepper
  • 1 jalapeno pepper, seeded and minced
  • 2 tomatoes, chopped
  • 1 cucumber
  • 0.25 cup olive oil
  • 0.25 teaspoon salt
  • 1 clove garlic, crushed
  • 0.25 cup fresh lime juice
  • 0.25 teaspoon ground black pepper
  • 6 fluid ounces tomato juice
Instructions:
  • Bring a pot of salted water to a boil, then add pasta and cook until al dente, about 8 to 10 minutes. Drain the pasta.
  • Mix together pasta, onion, bell pepper, jalapeno, tomatoes, cucumber, oil, salt, garlic, lime juice, black pepper, and tomato juice in a large bowl. Refrigerate for 2 hours, then toss once more before serving.
