Ravioli pasta salad with gazpacho dressing recipe

Whip up a quick ravioli pasta salad with refreshing gazpacho dressing in no time for a perfect side dish to accompany your favorite meat entree.
Ingredients:
  • 600g pkt Beef Ravioli
  • 60ml passata
  • 36.40 gm olive oil
  • 60g mixed baby salad leaves
  • 350g mixed tomatoes, halved
  • 1 small red onion, thinly sliced
  • 125.00 ml basil leaves
  • 40g olive
  • 40.00 ml drained baby capers
Instructions:
  • Boil pasta in a large saucepan until al dente following packet instructions. Quickly cool it in cold water, drain well, and transfer to a large bowl.
  • In a medium jug, vigorously whisk together the passata, oil, and garlic until well combined. Season with your favorite seasonings. Pour half of the passata mixture into the bowl with the pasta. Gently fold everything together using a large metal spoon until fully combined.
  • Toss together the salad leaves, tomato, onion, basil, and olive oil in a big bowl. Season to taste.
  • Plate the pasta mixture evenly on serving plates, layer on the salad mixture, sprinkle with capers, and serve with the remaining passata mixture.
