Deconstructed famous soup slaw served on baby greens or as a side salad.
Ingredients:
  • 5 cups shredded green cabbage
  • 0.5 cup chopped cucumber
  • 1 cup chopped tomato
  • 0.5 cup chopped yellow bell pepper
  • 0.5 cup chopped green onions
  • 0.5 cup chopped celery
  • 0.25 cup tomato-vegetable juice cocktail
  • 0.25 cup red wine vinegar
  • 1 teaspoon white sugar
  • 1 tablespoon salsa
  • 0.5 lemon, juiced
  • salt and pepper to taste
Instructions:
  • Combine the cabbage, cucumber, tomato, yellow bell pepper, green onions, and celery in a bowl.
  • Whisk together tomato-vegetable juice cocktail, red wine vinegar, sugar, olive oil, salsa, and lemon juice in a bowl. Season with salt and pepper to taste.
  • Drizzle the flavorful dressing over the vibrant vegetables, ensuring they are completely coated. Chill in the refrigerator for 2 hours before elegantly presenting the dish.
