Spiced Indian vegetable bahji, served with basmati rice and naan, ideal for a cozy dinner for two.
Ingredients:
  • 4 potatoes, peeled and diced
  • 1 tablespoon vegetable oil
  • 1 red onion, minced
  • 1 large tomato, diced small
  • 1 teaspoon garam masala, or more to taste
  • 0.5 teaspoon cayenne pepper
  • 0.25 teaspoon white sugar
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • In a large pot, cover the potatoes with salted water and bring to a boil. Simmer on medium-low heat until tender, about 20 minutes. Drain the potatoes.
  • In a skillet, warm vegetable oil over medium heat. Saute the onion until fragrant, about 2 to 3 minutes, stirring occasionally. Add the tomato and cook until the onion is soft and the tomato is tender, about 5 to 10 minutes. Mix in potatoes, garam masala, cayenne pepper, salt, and sugar, then simmer until flavors combine, about 5 minutes. Finally, stir in cilantro and cook for an additional minute.
