Ingredients:
  • 2 cups milk
  • 1 cup heavy cream
  • 4 egg yolks
  • 0.5 cup sugar
Instructions:
  • Combine the milk and cream in a saucepan over medium heat until a foamy edge forms. Remove from heat.
  • In a large bowl, whisk egg yolks and sugar until frothy. Slowly pour in the warm milk while whisking constantly. Transfer the mixture back to the saucepan and cook over medium heat, stirring with a wooden spoon until it slightly thickens and coats the back of the spoon. If you notice any small egg lumps, remove from heat promptly.
  • Strain the mixture into a bowl using a sieve or fine strainer. Cover and refrigerate for several hours or overnight.
  • Transfer the mixture to an ice cream maker and freeze as per the manufacturer's instructions. Once done, transfer to a sealed container and freeze until firm. If the gelato is too firm, simply refrigerate it until it reaches your desired consistency.
