Gennaro’s spaghetti alla puttanesca

Quick and vibrant pasta dish with authentic flavors.
Ingredients:
  • 4 cloves of garlic
  • 1 small handful of black olives (stone in)
  • 2 handfuls very ripe cherry tomatoes
  • 2 fresh red chillies
  • ½ a bunch of fresh basil (15g)
  • 400 g dried spaghetti
  • olive oil
  • 3 anchovy fillets
  • Parmesan cheese
Instructions:
  • 1. Boil salted water in a large pan. Meanwhile, thinly slice garlic, pit olives, halve cherry tomatoes, slice chillies, and pick basil leaves. Cook spaghetti in boiling water. 2. Heat olive oil in a large frying pan over medium-high heat. Add garlic, chilli, tear in anchovies and olives, stir for 2 mins until garlic is golden. Add cherry tomatoes and pasta water, cover and cook for 3-4 mins until tomatoes soften. 3. Drain pasta, saving a cup of cooking water. Add basil and pasta to the sauce with a splash of cooking water. Season to taste. Serve on a platter with Parmesan.
