Buttermilk blackberry jam cake with warm spices, black walnuts, and raisins - a festive treat!
Ingredients:
  • 2 cups white sugar
  • 1 cup butter, softened
  • 8 eggs
  • 2 teaspoons baking soda
  • 2 tablespoons water
  • 2 cups seedless blackberry jam
  • 3.5 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 2 teaspoons ground nutmeg
  • 1.5 teaspoons ground cloves
  • 1 cup buttermilk
  • 1 cup chopped black walnuts
  • 0.5 cup golden raisins
Instructions:
  • Begin by preheating your oven to a warm and inviting 350 degrees F (175 degrees C). Lovingly grease three 8-inch round cake pans and set them aside for their special role in this delicious creation.
  • Using an electric mixer, cream together butter and sugar until light and fluffy in a large bowl. Gradually add eggs one at a time, ensuring each addition is well mixed. Dissolve baking soda in water in a small bowl, then add to the batter along with jam. In a separate medium bowl, combine flour, cinnamon, nutmeg, cloves, and salt, then gently fold into the batter by hand, alternating with buttermilk. Gently mix in the black walnuts and raisins until well incorporated. Divide the batter evenly between the cake pans and spread it out evenly.
  • Bake the cakes in the preheated oven for approximately 35 minutes until the tops spring back when lightly touched. Let them cool in the pans until they are easy to handle, then flip them over onto a wire rack to cool completely after removing the pans.
