Try this mouthwatering German rhubarb streusel cake that's as easy to make as it is delicious, with a crust and topping made from the same simple dough.
Ingredients:
  • 2 cups all-purpose flour
  • 1 egg
  • 0.5 cup white sugar
  • 2 teaspoons vanilla sugar
  • 0.5 cup unsalted butter, softened and cubed
  • 3.5 cups chopped rhubarb
  • 3 tablespoons white sugar
  • 2 tablespoons unsalted butter, cubed
Instructions:
  • In a large bowl, sift flour and create a well in the center. Add egg, 1/2 cup sugar, and vanilla sugar to the well. Evenly distribute 1/2 cup cubed butter on top. Using your hands, mix everything into a dough. Cover and refrigerate for 30 minutes.
  • Preheat the oven to a cozy 325 degrees F (165 degrees C) and prepare a 9-inch springform pan by greasing it.
  • Spread 2/3 of the dough evenly in the springform pan and top it with rhubarb.
  • Crumble the rest of the dough between your fingers and sprinkle over the rhubarb. Follow by sprinkling 3 tablespoons of sugar. Finally, scatter 2 tablespoons of cubed butter over the streusel.
  • Bake in the warm oven until the streusel is golden brown and crispy, 40 to 50 minutes.
