Savory Irish beef stew with potatoes and vegetables, perfect for St. Patrick's Day or a cozy meal anytime.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 pound beef sirloin steak, cut into 1-inch cubes
  • 1 large onion, chopped
  • 2 medium carrots, chopped
  • 2 ribs celery, chopped
  • 3 cups hot water
  • 2.5 tablespoons dry brown gravy mix
  • 2 cubes beef bouillon
  • 0.25 cup Worcestershire sauce
  • 1 teaspoon chili powder
  • 0.25 teaspoon dried oregano
  • 8 medium potatoes, cubed
  • salt and ground black pepper to taste
Instructions:
  • In a stockpot over medium heat, sizzle the vegetable oil. Add beef and sear until all sides turn golden, which should take about 6 to 8 minutes. Toss in the onion, carrots, and celery.
  • Combine water, gravy mix, and bouillon in a small bowl, then pour the mixture into the stockpot. Stir in Worcestershire sauce, chili powder, and oregano. Simmer covered over low heat for 1 hour.
  • Fold in the potatoes gently, ensuring they're fully coated. Allow the mixture to simmer under cover until the potatoes are tender and easily pierced with a fork, approximately 30 minutes. Finally, season with salt and pepper to taste.
