Ghirardelli Ombre Brownie Cake

Impress with a decadent triple-layer brownie cake featuring rich dark, creamy milk, and smooth white chocolate ganache.
Ingredients:
  • 1 cup vegetable oil
  • 2 (20 ounce) boxes Ghirardelli Dark Chocolate Brownie Mix
  • 1 cup Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips
  • 1 cup Ghirardelli Milk Chocolate Chips
  • 1 cup Ghirardelli Classic White Chips
  • 2.25 cups heavy whipping cream
  • 0.75 cup light corn syrup
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and prepare three 8-inch round cake pans by lightly greasing and lining them with parchment paper.
  • Combine oil, water, and eggs in a large bowl, then gently mix in brownie mix until just moistened. Divide batter evenly among the 3 pans.
  • Bake for 38 to 40 minutes, or until a toothpick inserted in the center comes out clean. Allow cakes to cool completely in pans before removing.
  • Divide the chocolate chips into individual bowls for each type.
  • Microwave the cream in 30-second intervals until it just boils. Pour 3/4 cup of hot cream over each type of chocolate chips and stir until melted. Mix in 1/4 cup of corn syrup for each type and stir until glossy.
  • Chill for 2 hours before beating with an electric mixer until light and fluffy.
  • Place the cooled brownie cake layers on a plate and alternate layers with different types of ganache. Keep chilled until serving.
