Giant rice bubble cake recipe

Whimsical no-bake party cake, inspired by fairy bread, requires just 7 simple ingredients.
Ingredients:
  • 240g butter, chopped
  • 525g (15 cups) rice bubbles
  • 600g (3 cups) pink and white marshmallows
  • 250g (1 cup) hundreds and thousands, plus extra to top
  • 3 x 180g blocks white chocolate, chopped
  • 185ml (3/4 cup) cream
  • 2 pkts (8g each) icing flowers
Instructions:
  • Prepare three 20cm round springform pans by lining the bases with baking paper, letting it overhang, and securing it back in the pans. Lightly spray the sides of the pans with oil and line them with wide strips of baking paper.
  • Combine 1/3 of the Rice Bubbles in a large bowl. Melt pink marshmallows and butter in a saucepan over medium-low heat for 5 minutes until almost melted. Remove from heat, cool slightly, and stir until smooth. Pour over Rice Bubbles and mix gently. Add hundreds and thousands, mix well.
  • Spread the Rice Bubble mixture into the pan and press it down firmly while smoothing the top with a sheet of baking paper.
  • Create a second cake by combining half of the remaining Rice Bubbles, 200g of white marshmallows, 80g of butter, and 1/3 cup of hundreds and thousands. Make a third cake using the rest of the Rice Bubbles, mixed marshmallows, remaining butter, and hundreds and thousands. Let the cakes set for 30 minutes before serving.
  • In a microwave-safe bowl, melt the white chocolate and cream together in the microwave, stirring every 30 seconds for about 2 minutes until the cream is hot and the chocolate starts to melt. Stir until smooth. Chill in the fridge, stirring occasionally, for about 1 hour until the mixture is cool but not cold. Use electric beaters to whip until soft peaks form.
  • Take the cakes out of the pans and carefully remove the baking paper. Place the all-pink marshmallow cake on a cake platter. Spread 1/3 of the white chocolate mixture on top. Place the pink and white marshmallow cake on top of it. Spread half of the remaining white chocolate mixture over it, then add the white cake on top. Spread the rest of the white chocolate mixture on the final layer. Decorate with icing flowers and sprinkle a light dusting of hundreds and thousands. Allow it to set for 30 minutes.
