Gin and lime marmalade recipe

Create a mouthwatering marmalade, great for gifting.
Ingredients:
  • 1kg limes
  • 1.3kg white sugar
  • 125.00 ml gin
Instructions:
  • Trim and discard both ends of the limes. Cut limes in half lengthwise, then thinly slice into 2mm-thick slices. Transfer the sliced limes along with any juice to a large saucepan. Pour 1L water into the saucepan and bring to a boil over medium-high heat. Drain the limes and then return them to the pan. Add another 1L water and bring to a boil over medium-high heat. Cover and let it simmer for 30 minutes until the rind is soft.
  • Put sugar in a microwave-safe bowl and microwave on HIGH for 2 minutes until warm. Add it to the lime mixture and stir over medium heat until sugar dissolves. Bring to a boil and cook for 15 minutes until marmalade reaches setting point. Remove any scum, then mix in the gin. Transfer the hot marmalade into hot sterilized jars, seal, and allow to cool.
