Butter cookies filled with fruit preserves or dipped in chocolate and sprinkled, ideal for festive occasions!
Ingredients:
  • 2.25 cups cake flour
  • 1.5 cups all-purpose flour
  • 1.25 teaspoons baking powder
  • 1 cup unsalted butter, softened
  • 1 cup white sugar
  • 0.5 cup vegetable shortening
  • 4 ounces almond paste
  • 2 large eggs
  • 1 teaspoon lemon juice
  • 0.25 teaspoon almond extract
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfectly cooked dish.
  • In a medium bowl, mix together cake flour, all-purpose flour, baking powder, and salt.
  • In a large bowl, cream butter, sugar, and shortening with an electric mixer on medium speed until light and fluffy. Incorporate almond paste. Add eggs, vanilla extract, lemon juice, and almond extract. Gradually mix in the flour mixture on low speed. Scrape the bowl, then mix on medium speed until well combined, around 30 seconds.
  • Prepare a pastry bag with a French star tip or an open star tip; fill with batter. Pipe uniform cookies onto an ungreased cookie sheet, spacing them 1 1/2 to 2 inches apart to allow for slight puffing while baking.
  • Bake in the preheated oven in batches if necessary for 8 to 10 minutes, or until bottom edges are slightly browned. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
