Delight in cracking the toffee topping of these decadent creme brulees with glace ginger and dried apricot.
Ingredients:
  • 150g dried apricots, finely chopped
  • 20.00 ml glace ginger, finely chopped
  • 262.50 gm apple juice or orange juice
  • 2 x 500g tubs vanilla custard
  • 215.00 gm caster sugar, for sprinkling
Instructions:
  • In a cozy saucepan, simmer apricots, ginger, and fruit juice over gentle heat until the juice is fully absorbed, about 10 to 12 minutes. Spoon the luscious apricot mixture into eight 3/4-cup ramekins for individual servings.
  • Drizzle custard over apricots in ramekins, filling them nearly to the top. Chill covered in the refrigerator overnight, or until fully cold.
  • Place the grill rack closest to the heat source for quick cooking. Preheat the grill on high heat.
  • Place custards in a heatproof dish filled with ice. Sprinkle half the sugar over each custard. Grill for 4 to 5 minutes until sugar caramelizes. Repeat with remaining sugar, adding ice if needed. Allow toffee to set for 5 minutes before serving.
