Elevate roasted chicken with a delicious Asian twist for a simple and flavorful dinner.
Ingredients:
  • 20.00 ml sesame oil
  • 40.00 ml grated ginger
  • 4 x 180g chicken breast fillets
  • 125ml mirin
  • 80ml kecap manis
  • 300g white rice
  • 1 bunch coriander, leaves picked
  • Fried Asian shallots (optional), to serve
  • Lime wedges, to serve
  • 2 Lebanese cucumbers, thinly sliced
Instructions:
  • Preheat oven to 200°C.
  • Massage the fragrant sesame oil and ginger mixture onto the chicken, ensuring it is fully coated. Sprinkle a touch of salt to enhance the flavors, then transfer the chicken into a deep baking dish.
  • Drizzle Chinese rice wine over the chicken. Cover with foil and bake for 18 - 20 minutes until fully cooked. Let the chicken rest, lightly covered with foil, for 5 minutes before serving.
  • Next, place the kecap manis and chili sauce in separate bowls, and set them aside.
  • Separate the flavorful cooking juices from the roasted chicken and mix them into the rice.
  • - Portion the rice into individual bowls. - Cut the chicken diagonally and garnish with coriander and Asian shallots, if preferred. - Accompany with cucumber, lime, rice, and sauces for serving.
