Hainanese chicken rice

Ginger chicken with rice and spicy homemade chili sauce.
Ingredients:
  • 1.2kg whole chicken
  • 21.00 gm light soy sauce
  • 40.00 ml mirin
  • 4cm-piece fresh ginger, peeled, thickly sliced
  • 4 spring onions, ends trimmed
  • 9.20 gm peanut oil
  • 2 garlic cloves, finely chopped
  • 20.00 ml fresh ginger, finely grated, extra
  • 300g white rice
  • 2 Lebanese cucumbers, thinly sliced lengthways
  • Coriander leaves, to serve
  • Soy sauce, extra (optional), to serve
  • 2 long red chillies, seeded, finely chopped
  • 1 garlic clove, finely chopped
  • 1.20 gm salt
  • 2 tsp fresh ginger, finely grated
  • 21.00 gm lime juice
  • 10.60 gm light soy sauce
  • 4 spring onions, ends trimmed, thinly sliced
  • 20.00 ml finely grated fresh ginger
  • 60ml peanut oil
  • 1 tsp sesame oil
Instructions:
  • Dry the chicken cavity with a paper towel, then coat it with a mixture of soy sauce and mirin. Add sliced ginger and spring onion to the cavity. Place the chicken in a slow cooker breast-side down, pour in enough cold water to cover it, and cook on low for 6 hours until done. Save the poaching liquid for later use.
  • Prepare the chilli sauce by combining chilli, garlic, and salt in a mortar. Gently pound with a pestle until a paste forms. Stir in ginger, lime juice, and soy sauce until well combined.
  • In a large saucepan over medium heat, warm 2 teaspoons of peanut oil. Sauté the garlic and grated ginger until fragrant, about 1 minute. Stir in the rice and pour in 2 cups (500ml) of reserved poaching liquid. Bring to a boil, then lower the heat and simmer covered for 11 minutes until the liquid is absorbed and the rice is tender. Let it rest covered for 5 minutes before serving.
  • Create the spring onion sauce by mixing spring onion and ginger in a small heatproof bowl. Heat peanut oil and sesame oil in a small saucepan over high heat until very hot. Gently pour the hot oil over the onion mixture and stir in the mirin.
  • Prepare the chicken as desired and plate it with the cucumber and coriander. Serve alongside rice, chili sauce, spring onion sauce, and extra soy sauce, if desired.
