Quick and delicious Hainanese chicken and rice ready in just 30 minutes for a speedy weeknight meal.
Ingredients:
  • 6 chicken thigh fillets, skin on
  • 10.60 gm soy sauce
  • 54.60 gm olive oil
  • 4 garlic cloves, crushed
  • 20.00 ml Ginger Paste
  • 200g (1 cup) jasmine rice
  • 5 green shallots, finely chopped
  • 625ml (2 1/2 cups) chicken stock
  • 120g (1 cup) green beans, trimmed, halved, blanched
  • 2 tsp sesame oil
  • 2 Lebanese cucumbers, sliced
  • Fresh chopped chilli, to serve
Instructions:
  • Preheat the grill to high. Lightly oil a baking tray. Place chicken on a wire rack. Pour boiling water over the skin and pat dry with paper towel. Transfer chicken, skin side up, to the tray. Grill each side for 2-3 minutes until skin crisps. Drizzle with soy sauce, baste with pan juices, and grill for another 1-2 minutes on each side until golden. Cover and set aside to keep warm.
  • Heat 1 tablespoon of oil in a large saucepan. Sauté half of the garlic and ginger for 1 minute. Stir in the rice and half of the shallot until coated. Pour in the stock and bring to a boil.
  • Simmer covered on low heat for 15 minutes until liquid is absorbed and rice is tender. Gently fold in beans.
  • Mix together the sesame oil, the rest of the oil, garlic, ginger, and shallot in a bowl. Season with salt.
  • Slice the chicken, then divide the rice mixture among bowls. Top each bowl with sliced chicken, cucumber, and chili before drizzling with shallot sauce.
